Chef Pat, fresh from yesterday's culinary triumphs at the Roc's Sports Cafe 7th Anniversary Party, brought us breakfast and not breakfast for breakfast this morning. And the recipes are so simple that even us guys can do 'em!
Apple Glazed Pancakes...oh Hell Yeah!
Make pancakes according to the instructions on the package.
For the glaze, do this: Core, slice, and peel an apple, cook it in 1 tbsp of butter for 2 minutes. Add 1 cup of apple juice, 2 tbsp of brown sugar, and cook another 2 minutes. Mix 1 tbsp of corn starch and 3 tbsp of apple juice together and then add it to the mixture. Cook it to the desired thickness.
Cook a chuck roast in the oven at 375 degrees or a crock pot on high until the internal temperature is 185. Pull the meat out and let it sit until it's room temperature. In a different pan combine the meat with a packet of taco seasoning. Andd 1/2 cup stock from meat and 6 ounces of enchalada sauce. Mix well - stuff it how you like it, top with one ounce of sauce and cheese.
