Cooking For Guys Who Can't Cook

Pat's recipe for Super Sausage Stuffed Mushrooms actually came straight from All recipes.com, so click and enjoy! Interesting website, by the way.

For the veggie nachos, pat suggests sauteing veggies (he used squash, peppers, and onions) and mixing them with a half a pkg of taco seasoning and 3 tablespoons of water. Put it over taco chips, cover with the shredded cheese of your choice, and melt 'em in the oven. Sprinkle diced tomatoes, olives, and shredded lettuce on 'em when they come out.

The Noodles were incredible, very similar to a recipe my wife makes all the time (if I can manage to save the pictures I will post them later). Here's how he made the meatballs:

1 cup soft bread crumbs, 1 cup milk, 1/2 cup finely chopped onion, 1.5 lbs lean ground beef, 1/2 ground pork (optional), 1 egg, 1/4 tsp salt, 1/2 cup water. Combine all the ingredients, then roll raw 1-inch meatballs and simmer gently for 1 hour in a large saucepan or Dutch Oven.

To make the pasta sauce, get 2 15oz cans of tomato sauce, 1 10oz can of diced tomatoes with garlic & herb, 1 chopped onion, 1 green pepper, 1 tbsp each of olive oil, italian seasoning, and garlic. Heat some oil, cook the onion, pepper, and garlic for 2-3 minutes. Add the rest of the ingredients and cook until it starts to bubble. Place te raw meatballs in the sauce and cook for 1 hour or until the meatballs hit 165 degrees.
