Cooking For Guys Who Can't Cook

Chef Pat dialed in a couple of simple sammiches for us today:

French Onion Burger (pictured)

Mix 2 lbs of ground beef with 1 pkg of Lipton Onion Soup Mix
You also need 8 onion buns, 8 slices of provolone cheese, 1 large onion, 1 teaspoon of butter, and 2 oz of marsala cooking wine.

Melt butter on medium heat...cook very thinly sliced onion in butter, do not stir until they begin to brown. That's the sugar in the onions starting to carmelize. Should take 5-10 min. Deglaze pan with wine, cook burger and top with onion mixture, melt cheese on top to serve. Serve on toasted onion bun.

Fried Catfish Sandwich (not pictured, or you'd see it)

You need: 1/4 cup yellow corn meal, 3 tbsp flour, 1 tsp cajun seasoning, 2 6-8 oz catfish fillets, 3 tbsp melted butter, and cooking spray.

Spray a non-stick pan with cooking spray. Mix the dry ingredients well, and coat the fish with it. Place fish in non-stick sprayed pan with melted butter, cook for 4-5 min each side. Serve on a soft hoagie bun, top with homemade or premade coleslaw. Yes, coleslaw.
